Jewel Cookies

Since I have today off from work, I decided to bake cookies to freeze for Easter. I usually make these cookies for Christmas, but they are prefect for any holiday (just get the right colored M&Ms).

Ingredients:
1 cup granulated sugar
2 sticks of butter
1 large egg
1 tsp vanilla extract
1 tsp baking soda
2 cups flour
1 1/3 cups M&Ms ( I chose pastel colors for Easter)
granulated sugar as needed

Method:
Preheat oven to 350F.
Cream together butter and sugar until light and fluffy.
Add egg and vanilla.
Combine flour and baking soda.
Add to creamed mixture until blended.
Stir in M&Ms.
Shape into 1 inch balls.
Place on cookie sheet (either greased or covered with parchment paper) about 2 inches apart.
Dip a glass in water and then dip into sugar.
Flatten the balls of dough.
Bake 10-12 minutes.
Let cool for 1 minute.

Makes about 3 dozen cookies.
