Pumpkin Cookies

I don't know how I forgot to add these to my blog, but here they are. Enjoy :)


Preheat oven to 350F

Cookie Ingredients:
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups granulated sugar
1 stick of butter (.5 cup)
1 cup pure pumpkin
1 large egg
1 teaspoon vanilla extract

Glaze Ingredients:
2 cups sifted confectioner's sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract

Cookie instructions:
1. Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt.
2. Beat together butter and sugar until creamy.
3. Beat in pumpkin, egg, and vanilla until smooth.
4. Add flour mixture.
5. Drop by rounded tablespoon onto a greased cookie sheet.
6. Bake 15-18 minutes.
7. Let cool for 2 minutes.

Glaze instructions:
1. Combine ingredients until smooth.
2. You may need to add either more sugar or milk to get the right consistency. You don't want the glaze to be too runny.
3. Drizzle over cookies.

Makes about 3 dozen cookies
