Vegan Banana Sunflower Seed Cookies

So a majority of my co-workers are on big health kicks (some even converted to vegans), and I wanted to bake them something they could enjoy. Therefore, I decided to attempt to bake banana sunflower seed cookies.

3 ripe bananas
1/2 cup canola oil
1/2 cup granulated sugar
2 cups flour
1 cup sunflower seeds
1 tablespoon baking powder
1 teaspoon baking soda

1. In a large bowl cream together bananas, oil, and sugar (I used a hand beater on the lowest setting, a mixer is on my wedding gift registry!).
2. In a separate bowl, mix together the flour, baking soda, baking powder and sunflower seed. Add this mixture to the banana mixture. Mix thoroughly.
3. Chill in the refrigerator for 30 minutes. While chilling, preheat the oven to 350°F and grease a cookie sheet.
4. Drop 1 inch spoonfuls onto the cookie sheet about 2 inches apart. Bake for 10 minutes, until golden.

Makes about 40 cookies. Serve with juice or tea (I'd say milk, but that defeats the purpose of being vegan).

UPDATE: These cookies were a big hit at work, they were gone in minutes!
