Applesauce Cookies with Caramel Frosting

Applesauce Cookies
1 cup All-Purpose Flour
3/4 cup Whole Wheat Flour
1 teaspoon Cinnamon
1/4 teaspoon Pumpkin Pie Spice
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 cup (1 stick) Butter, Softened
1 cup (packed) Brown Sugar
1 large Egg
1/2 cup Applesauce

Preheat oven to 375 degrees Fahrenheit. Use ungreased cookie sheets (can line with parchment paper). In medium sized bowl, whisk flours, spices, baking soda, and salt until well-blended. In large mixing bowl, beat butter and sugar on medium speed. Then, beat in egg and applesauce. Gradually, stir in flour mixture until well combined. Drop dough in rounded spoonfuls about 2 inches apart. Bake 10 to 12 minutes or until golden brown around edges. Remove from oven and let cool for 1 minute before transferring to a wire rack. Let cool completely before adding frosting. 

Caramel Frosting

1/2 cup Butter 
1 cup Brown Sugar
1/4 cup Milk
2 cups Powdered Sugar

Melt butter in a medium saucepan over medium heat.  Stir in brown sugar. Constantly stir until boiling. Add milk and resume to a boil. Remove from heat and let cool to room temperature (~30 minutes). Stir in powdered sugar until smooth. Flip cookies over and dip. Place single layer on cookie sheet or plate and let frosting harden. Enjoy!
